Black Garlic is regular garlic that has been processed in a “low and slow” manner, resulting in a substance that is VERY different to its original state. Gone is the intense garlicky flavor. Instead, the flavor has mellowed and sweetened, kind of like a balsamic or a savory raisin.
Black Garlic is terrific in sauces, and adds an umami kind of flavor to whatever you add it to. I really like it in a marinara sauce, I just add a little in the beginning when I am browning the onions.
This garlic was sustainably grown in Connecticut from Organic seed garlic, and processed in Torrington, CT this year.
